What I Eat In A Day #2.1

I had a lot of fun with the last What I Eat In A Day Post that I did and decided to do another one! Plus since I’m stuck at home all day I can cook more which is fun and I want to share that experience with you guys.
I started the day out with a smoothie from Naked. I’m not a breakfast person and rarely eat in the morning so I prefer alternatives like smoothies or protein vegan milk because they keep me full till lunch time or at least for a few hours.

I got a little peckish so I decided to have a Clif bar which are my favourite snack at the moment.

For lunch I wanted something light and healthy because I was planning a kind of heavy dinner so I made an eggplant curry which I ate with rice, seaweed and kimchi. You can check out the eggplant curry recipe by clicking here. The seaweed I eat is from the brand GimMe and the kimchi is Mother-In-Laws vegan cabbage kimchi. It turned out really good!

For dinner I decided to try something new! I made a beyond burger (which isn’t new I have those all the time lol) with something called the slutty vegan sauce. I got the recipe from a YouTube channel that I am obsessed with called GhettoVegans– they have amazing recipes and you should totally check them out even if you’re not vegan! The burger turned out more amazing then anything I could have imagined and I am definitely going to be making it again! Click here for the recipe.

For dessert (because you have to have desert right!) I had this Enjoy Life chocolate bar.

  1. I must be living under a rock…. are you a vegan? If yes, you probably get asked this a lot. I think it’s great that you are using this time in a productive way to learn new recipes. I’m hoping to make homemade soft pretzels but haven’t gotten around to making them yet! 🥨

    1. Yup I’m vegan and good luck with the pretzels!!

      1. I made them tonight since there was nothing better to do. The batch was HUGE and I have tons of leftovers. They were quite time consuming so I would cut the bath in half if I were to make them again. 🥨 These pretzels would be vegan if t wasn’t for the egg wash.

        1. Yeah most pretzels can be made vegan pretty easily! I usually end up making too much when I try making something new but I guess that’s just how you learn.

          1. This recipe made a big batch of pretzels which I wasn’t expecting. I used enough flour for 2.5 large pizzas. And yet, we are ate almost all of the pretzels in less than24 hours. Twisting them into pretzels was a pain as it was quite labor intensive. Would I make them again? Probably not, unless I halve the recipe next time. COVID-19 is a great excuse to try new recipes! There’s tons of recourses online which is great 😋

            1. Yeah something about pretzels just makes them easier to make I don’t know why! I’m sure twisting them wasn’t easy but I guess when you’ve got a bunch of free time on your hands why not.

    Just a caution on the Clif Bars though… They are very high in carbs. Depending upon the flavor, they can hit the amount advised for a full sit down meal. Carbs, not calories are the true enemy (as you probably know).

  6. Always includes a cliff bar though, right? 🤣. Hope you’ve got a good supply! I have a funny story related to Cliff bars— I was doing a solo couch-surfing trip in the States in 2009, and was exploring the University of Washington campus whilst staying in Seattle. I was on a tight budget the whole trip and had a budget of something like $15 a day so was sometimes skipping meals! There were a couple of people on the campus handing out free samples of Cliff bars from these little trolley things. But they wanted to go home so were just freely giving them away! I went away with about 20-30 of them lmao! I was eating Cliff bars for the next few weeks, it was epic! Such a good memory.
    Cooking in the current time requires having done good pre-planning and a good existing stock of ingredients! 😁 I’ve been organising all my spices and stuff 🙂 and I have a secondary pantry in my car boot 😉.

    1. LMAO! Just found the diary entry which I knew I must have created:
      “After that I asked someone the way to the university. The University of Washington had a really pretty campus, at the front of it a huge water fountain. The buildings had a tasteful grey stone architecture, making them look old and sophisticated. The highlight was the physics & astronomy building. On the wall of it outside they had engraved Maxwell’s four equations for electromagnetism! I thought it was brilliant so I took a picture of each one.
      Actually the highlight was when I happened to walk past a guy and a girl who had some plastic boxes on wheels out of which they were giving out free samples of ‘Cliff’ energy bars! They were desperate to get rid of them and encouraged us to take as many as we liked. I stuffed my pockets full of them and the guy asked me if I had enough. I said no and he made me take my rucksack off and open it so he could scoop handfuls of the bars into my rucksack! He pretty much filled the remaining space in my rucksack to overflowing, and I left with a massive grin on my face thinking how much money I could save by eating these instead of buying food! Amazing!”

                1. Great! 🙂. To be honest I have no idea how cases are by city here, apart from the fact that London has a lot overall, and I know even less about actual hotspots in terms of density of cases.
                  I’m only 40 miles from London, so I imagine there’s a good risk of cases spreading here. I’m not too interested in that anyway since the advice is the same whatever.
                  People are ignoring advice here, but police are starting to get involved to clear crowds and things :). Yesterday Snowdonia National Park recorded its busiest Saturday in history…😨.
                  Make no mistake, the UK is FILLED with idiots, and we’re being surprised daily by just how many there are. 🤷‍♂️
                  Morale-wise and emotionally though I’m doing great, keeping busy and keeping a routine, as well as finding ways to help people 🙂. Thank you! 💙

                  1. Yeah it’s crazy how people are ignoring the guidelines- a lot of people here are still ignoring them as well. I think that’s what causes it to spread.

                2. One of the first 6 deaths in the UK was actually in a hospital 2 streets from me a couple of weeks ago, so I’ve basically been assuming it’s here :).

    2. I don’t think you can be a student and not at least partly survive on Clif bars! Lol I’ve had them instead of a meal before too!
      I’m glad you’re all stocked up you need to be with the panic buying right now lol.

        Yeah…I’ve just been to the supermarket to get 2 things and had a look around. I really got in there just in time at the weekend, which was my prediction. Unfortunately, people I warned on Saturday didn’t really take me seriously!

    That burger tho!
    right now im about to make mac n cheese? sorta..
    it’s harder now as im vegan BUT im having less added sugar and oils.
    now i can just enjoy pictures lol

    1. Lol I’ve been staring at food pictures a lot more these days too! Mac n cheese is a difficult dish to make vegan. I tried the Daiya one but I kind of hated it. To be honest I hate most Daiya products anyway.
