What I Eat In A Day

I have been wanting to make another What I Eat In A Day post for a while now and someone also suggested it on the survey/poll I took a few weeks back but I have not had the time recently and to be honest I had not been eating anything that exciting so I wanted to wait till I ate somethings that were new and fun. That way I can do mini reviews along with the what I ate in a day post. This is from a while back but looking at the pictures now makes me want to go get a snack lol! Anyway, I hope you enjoy this post!

Breakfast

   
As those of you who have read my previous What I Eat In A Day will know I am not a breakfast person. I rarely eat breakfast and when I do it’s usually some granola or something like that. I tend to prefer to drink a smoothie or protein milk for breakfast rather than eat because eating in the morning makes me feel a bit gross.
On this day we decided to eat breakfast for once and made some vegan waffles with vegan whipped cream, vegan marshmallows and some fruits.
The waffles we made were the Dark Chocolate Chip Waffles from Nature’s Path. This was our first time trying them and they were super delicious and we ended up getting some more after this. For anyone looking for dairy-free and egg free waffles I would highly recommend these although they do have soy so if you are soy-free these may not be for you. They are also gluten free for those of you who are looking for gluten free alternatives.
The whipped cream we decided to use was the Coco Whip Topping from So Delicious. So Delicious is probably one of my favourite vegan brands when it comes to anything sweet like ice cream or whipped cream. Their products are honestly so good and if you have not tried them yet I would highly recommend them even if you are not vegan/dairy-free. The taste was really good although it got melted which was out fault because we should have waited before we put it on the waffles. It still tasted awesome though so we didn’t really care. The coco whip is vegan, gluten free and non-GMO.
The marshmallows are from Dandies. They are honestly so delicious and they taste just like non-vegan marshmallows which is great. I love eating marshmallows as snacks sometimes so we usually have some at home and since we were having a pretty unhealthy breakfast we decided to add the marshmallows on top! They are vegan, gluten free and non-GMO.
This was one of the best breakfasts ever and I have breakfast a lot more now thanks to these waffles- I usually have them with syrup though not like this. And I’ve also been having them with Gardien’s breakfast patties which are nice and savoury so they balance out the sweetness of the waffles.

Lunch


Since I had a big breakfast I wanted to eat a simple lunch and preferably something rice based because that isn’t too heavy. I had been meaning to make Korean style wings for a while and decided this would be a good time to make them. I also had a bunch of veggies I wanted to use up so I decided to stir fry those to eat as a side too. All I added to the veggies was a bit of soy sauce and a bit of crushed red pepper.
For the wings I used cauliflower wings from a brand called Wholly Veggie. In general, I can’t say I’m a huge fan of this brand simply because I had literally never tried any of their products before the wings. The wings come with their own sauce but since I wanted to make mine Korean style I didn’t use those. I baked the wings, made the Korean style sauce and it turned out absolutely amazing. I would DEFINITELY recommend these. The wings were also quite a lot but I shared them with my sister so the amount in the picture is a bit less than half.

Snack


I got a little peckish before dinner so I decided to make a snack. I had eaten kind of an unhealthy breakfast and lunch so instead of having an unhealthy snack too I decided to make some stir fried plantain. I absolutely love plantain especially when it’s fried/stir fried like this. It turned out amazing and I was definitely very satisfied with the snack.

Dinner


After having so many new things to eat in the morning and for lunch I decided to make something very simple for dinner. I already had some left over stir fried vegetables and rice so I decided to make a Korean dish called Bibimbap which is a mix of rice, vegetables and gochujang. I ate it with some GimMe seaweed and some Mother-In-Law’s Kimchi. I talk about both of those all the time and you know I absolutely love them both.

Conclusion

I think this was such a great day for food because I got to try a bunch of stuff I had been meaning to try for a long time and I also got to eat a lot of my favourite foods! I also wanted to say that I don’t usually eat this much processed/frozen food in general since I try to eat as many homemade meals as possible but I think it’s nice to take a break once in a while and enjoy something like this.

Thoughts

  1. I eat a lot of Asian foods. Indian, South East Asian, Korean, Japanese. Eat a lot of vegetables and salad base. Enjoy whole grain breads. I like fish occasionally. I will not eat junk foods or sugar drinks.

    1. I don’t drink sugar drinks anymore but I do eat junk sometimes- I’m trying to work on that though. You have a really healthy diet by the way!

    1. Oh wow if you think this is light you should see what I eat on regular day- this was a really heavy meal for me lol!

      1. Wow, you must be young and don’t deal with diabetes daily! I mean that in a most kind way of course. 😊

        1. Yup I am lucky enough to be able to eat most things right now. I guess someone with diabetes needs a more specific diet.

          1. I do, keep sweets to a very minimum as well as other foods.

    1. You definitely should- they were so delicious and crispy! Plus, they were super easy to make and pretty healthy since you just have to bake them not fry them.

  4. My husband cooks a lot of Asian dishes so I’m somewhat familiar with Korean food. We like Korean BBQ. I had a Singaporean chicken and rice dish for dinner tonight. My favorite meal of the day is breakfast because I love fruit. I mostly skip breakfast though and eat breakfast for lunch instead.

    1. Korean BBQ is really good! I love Korean hotpots too. I have never had Singaporean food before but it sounds good. I love fruits too- I try to eat some at least once a day!

      1. I could easily eat fruit for breakfast, lunch, and dinner. If nobody was watching, I would be a fruitarian. At one point I even considered it 😂

        1. Lol maybe one day you’ll write a post about becoming a frutarian and I’ll know you finally gave in!

          1. I wish I could do that but my adrenal fatigue would be even worse on a fruitarian diet lol Fruitarian diet sounds like a fun way to live, not gonna lie 😌

            1. It sounds fun but at the same time I think I would feel good for a few days and then probably be done with life till I get some chips or something lol!

  5. I LOVE Coco-whip by So Delicious! It’s so good, creamy, and coconutty (if that’s a word!!!) I also like their ice creams. I have been considering trying my own coconut-based ice cream. It sounds so good. I’ve never had plantains, but am somewhat allergic to bananas. Are they the same family?
    I have had the dandies marshmallows because I had a friend who was allergic to corn and barley, and those were made with tapioca starch, if I’m remembering correctly. They were very tastey!!! Good eating, Pooja!

    1. Yes it has this amazing cocnutty flavour for sure! Yeah I think plantains are part of the banana family so you may have to try a bit and make sure you’re not allergic first.
      Those marshmallows are really good and yeah they are corn free so it’s a good alternative!

  7. Plantains are so good! I haven’t tried Korean food but I’ve heard Korean BBQ is super yummy, I have to indulge.

    1. Korean BBQ is really good although I’ve only had the vegan version!

  8. Oh my gosh! I love bibimbap! Seaweed paper is one of my fave addition to any dish! But if I had to choose between the three meals, I’d go with the breakfast meal. It’s mouthwatering! 😅

  9. I love Korean food and kimchi! One of my Korean friends said kimchi is like tea to the Brits! I love both waffles and pancakes and cried when my waffle iron broke!

    1. Yeah Korean food almost always has kimchi as a side and it’s so delicious! Oh no- I hope you get a new waffle iron soon but until then enjoy some pancakes!

  12. I have to confess that I’ve never tried Korean food, but having read this post (and drooled a little on my keyboard) I have to tell you that I’m definitely wanting to change my foodie ways! I’m vegan so everything you talked about sounds delish!

    1. Yes, you definitely need to try Korean food especially as a vegan because they have so many vegan options! I would also recommend checking out this YouTube channel called Cheap Lazy Vegan- she’s Korean and has a lot of vegan Korean recipes.

  17. The food pictures look so appetizing. I love Korea and their culture. Although I have only tried Bibimbap and kimchi, I know all of their food is to die for. I really wish to try authentic jjajangmyeon I’m super whipped that you’ve tried Korean food in your diet. Would love to try the wings, please share the recipe if you have it handy.

    1. I love Jjajangmyeon and it’s actually quite easy to make so I would definitely recommend it! I’ll definitely share that recipe soon and thank you!

    1. Thank you! No unfortunately that is not my usual- I usually eat a lot more veggies but this was kind of a eat whatever I want day lol!

  23. Yummy! I’m not a big breakfast fan either I would usually have a simple bagel with peanut butter and banana and a few pumpkin seeds and catch up at lunch. But my boyfriend makes the perfect fried breakfast (tofu scramble + mushrooms) so it’s usually my go-to for our weekend brunches hehe

    1. I usually eat the MIL gochujang but I’m sure they all taste very alike. You should definitely try it like that it’s delicious!

  26. I prefer pancakes to waffles, usually by there are two exceptions.
    1. A New Orleans style restaurant here serves waffles with buttermilk chicken and maple syrup. First time I tried them I was a bit sceptical, but as soon as I ate them I knew why they are one of their best sellers!
    2. After a night of a few games of ultimate we sometimes go to a small little hole in the wall waffle place to and I get their snickers type of waffle. It is one of my favourite treats!

  27. All these foods look amazing, especially the plantain. Ugh, I love plantain so much😭. I prefer pancakes to waffles and I’ve never tasted any Korean dish in life, I think everything I’ve ever eaten is mostly food I grew up eating at home, just some local Nigerian dishes. I’d love to explore other dishes too and since I can’t cook them, I’d have to start saving up for them, haha.

  32. I absolutely loved this post! It also made me really hungry. Your breakfast looked delicious! Im gunna have to say I’m more of a waffle person but a pancake once in a while cant hurt. Those cauliflower wings looks delicious! Also so random but I have been wanting to try bibimbap!

  33. My top vegan food recommendations aren’t healthy! But, the best chocolate ever are Booja Booja truffles – they’re expensive, but you don’t need much. Favourite chips are Eat Real quinoa chilli & lime chips. I love plantain, but have never prepared it before – if I see it at a restaurant, I tend to order it. I really must try Korean food soon.

  35. All the dishes look so delicious! I’m not a breakfast person either, even though I hear a lot of: it’s the most important meal of the day. it makes me feel the same way for some reason. I just skip breakfast and eat in the middle of the day , no dinner. And I love those stir fried plantain.
