Vegetable Pancake Recipe

This is another fabulous and delicious recipe from my mum! She is a really great cook and I always tell her she needs to start a YouTube channel or something. Anyway, she wanted to share this vegetable pancake recipe with you guys since last year but I took a break from blogging and then I got busy with school so I wasn’t able to post until now. It’s such a simple, healthy and delicious recipe I’m sure you guys will enjoy it if you try it.

Ingredients

  • 2 medium potatoes
  • 1 carrot
  • 1 onion
  • 1 small or 1/2 a large beet
  • 1 ginger
  • 4-5 cloves of garlic
  • A few coriander leaves

These were the vegetables my mum used but feel free to substitute them with other vegetables that you prefer or may have in the fridge.

Instructions

  1. Grate all the vegetables and mince the coriander, garlic and ginger.
  2. Mix the this with 3-4 tbsp. of rice flour/plain flour or any flour you prefer. You can use a GF flour if you want to make this recipe GF.
  3. Add salt and black pepper to the mixture according to your taste- I added 1 tsp. of salt and 1/2 tsp of black pepper.
  4. Mix everything really well.
  5. Add a bit of oil to a skillet/frying pan and add enough of the mixture to make a pancake- see image below. Cover the pan with a lid and let it cook on medium-high heat for 3-5 minutes and check to see if it’s done. When the bottom is done flip it over and cook the other side till both sides are cooked well and crispy.
  6. Repeat this till all your pancakes are done.
  7. You can garnish the pancakes with some fresh coriander leaves if you like.
  8. You can serve this with plain “dahi” (yogurt) or if you’re vegan you can serve it with vegan plain yogurt or vegan mayonnaise. Enjoy!

  1. This looks like a wonderful way to spice up my latkes! I am part Slovak Jew, so potato pancakes were a staple in my house. Of course, Slovakians were often short on basic food necessities, so potatoes, salt , and pepper were often the only things available, though I like to add onions to mine.
    I love the idea of adding a carrot or beet!

    1. Ooh I really like potato pancakes too but yeah this is a fun way to spice it up a bit! I took a class on the History of Food and I remember learning about latkes and the history behind it along with other central European food. Glad you enjoyed the post!

  2. I’ve never tried vegetable pancakes before but is it weird to say I like the color?? 😂😂 my favorite vegetable is broccoli!! I used to hate it when I was younger, but it’s sooo good now.

    1. Omg I love the colour too! I started adding a bit of beetroot to my rice so it turns pink and it looks so pretty 😜
      I love broccoli too it’s definitely my favourite!! Lol look at us adulting and talking about how great broccoli is 😂

    1. Yes sometimes

        1. Yeah I have the Premium Plan and the amount changes each month depending on certain things.

  10. this reminds me of latkes only healthier Pooja. When I was juicing a lot, I would take the fiber from the juice and add egg turn them into pancakes and saute in a pan which was pretty good.

    1. Ooh that’s such a good way of using up the leftover fiber!

        It’s cheaper to buy my juice these days tho and time is a premium like you know.

  16. I’ve never tried these but I’ve eaten okonomiyaki which comes pretty close. Very yummy!
    What keeps this pancake together if there are no eggs?

    1. The vegetables have a lot of moisture so you really don’t need to add any egg. It’s pretty sticky on it’s own. Ooh okonomiyaki sounds good!

  22. it’s typically okay to see a vegetable pancake, but the taste is masked if the smell is overwhelming. The color red that it turns to is probably safe to eat.

  25. Are you from India? I think yogurt is called ‘Dahi’ in Hindi and that’s the language of India! Even your name (Pooja) is a very very common name in my country. So are you Indian?
