What I Eat In A Day #5

Introduction

I am back with another what I eat post because I know some of you really enjoy those and planning for this posts allows me to eat a little less healthy than I usually do which is always a plus lol. I generally eat pretty simple and I usually eat the same thing for lunch and dinner which can be a bit boring to read about. However, I love food so I’m always looking for new things to try so every once in a while I try out a bunch of new dishes and take the opportunity to share it with you guys.

I also wanted to add that everything mentioned on the post is vegan so if I say like butter or something just assume it’s a vegan version of it. Anyway, hope you guys enjoy this post- my mouth was watering while writing it and looking at the pictures lol

Breakfast

As you guys probably know if you’ve read my other what I eat posts I’m not generally a breakfast person. I don’t get hungry in the morning so I usually just have a smoothie or some protein milk or something. But I kept seeing people posting pictures of pancakes and it made me kind of crave them so I got some pancake mix and actually ate breakfast for once.

I used the silk vanilla almond creamer instead of regular almond milk and they tasted way better- I would totally recommend doing that but don’t put too much of it otherwise it gets too sweet. I also used half of a very ripe banana as an egg replacement. And I added a pinch of cinnamon powder for flavour but then I remembered I hated cinnamon so that was a mistake. Luckily, it wasn’t too much so I could barely taste it.

This was my first time making pancakes on my own. I’ve only made them once before with my mum but that was back home. They were pretty easy to make and luckily they turned out amazing- I was scared they wouldn’t be soft enough. I’m still not a breakfast person but it’s nice to eat something once in a while. Plus, I knew I would be making a post out of my meals that day and I didn’t want to be like I drank tea and that was it.

Lunch

For lunch, I decided to make Korean tofu scramble. You can check out my recipe for it here. It turned out delicious of course and I was able to use up the tofu before it expired. For those of you who don’t use tofu very often, you have to be very careful with it because it goes bad very easily. Always taste a small piece before you add it to the dish because it could have gone bad even before it expires.

I ate the tofu scramble with rice, kimchi and seaweed. I use the Mother In Law’s vegan kimchi and GimMe vegan organic seaweed. If you try kimchi and are vegan please check the ingredients and make sure it doesn’t have any animal products as it often tends to have animal products in it. People sometimes use fish oil, shrimp or oyster sauce so just check thoroughly before buying it. Seaweed is usually vegan so you don’t have to worry too much about that but of course you should always check just in case.

Dinner

I was pretty full after a heavy breakfast and lunch so I decided to keep it simple and make a grilled cheese sandwich. However, I didn’t want to make an ordinary grilled cheese- I wanted to try something I saw online.

I decided to add some Taki’s to the sandwich. The purple Taki’s are vegan for anyone interested. They’re a bit spicy so it gave the sandwich a really nice kick to it. I am really enjoying putting Taki’s in everything these days. I added some to my burrito the other day and it was as the German’s say sehr lecker. Sorry, I’m learning German and I can’t stop translating everything to German. My sister obviously loves living with me even more now although for some weird reason she has been avoiding me… 😜

Anyway, if you want to take your grilled cheese to the next level try adding some Takis. Or salsa. Or pickled jalapeños. Or tikka masala paste. I eat a lot of random stuff to be honest lol. In my opinion, you can’t go wrong with bread, cheese and a ton of butter. It tastes good no matter what random thing you add in there. I’ve tried everything from vegan sausages to peanut butter and marshmallows. They all tasted pretty good.

👆 There’s the Taki in the sandwich! It was absolutely delicious.

Final Thoughts

That was pretty much it for the day. I had a lot of fun trying new thing and I actually made all three again some time ago and still loved them. The tofu I make very often but the sandwich and pancakes not so much. I feel like they aren’t the healthiest especially considering how much vegan butter I use. And I eat pretty simple in general so I don’t want to get an upset stomach by randomly eating a bunch of greasy, spicy stuff. I’m not used to eating like that so if I eat too much of it I get sick.

  1. I love tofu and my easiest tofu recipe is just mixing tofu with Korean bean sauce. LOL. Now I would like to try your recipe.

  7. Have you eaten Besan Chilla? It’s an Indian dish. It’s like a pancake. Even basic Besan Chilla with just gram flour, red chili powder, thymol seeds, and salt tastes delicious. You can add onions and green chilies also.

    1. You totally have to Taki’s are so delicious- a little spicy and a little sour! Aww thanks I’m trying to use German more often since it helps me remember the words faster.
