What I Eat In A Day #7

Introduction

I thought I would do another What I Eat In A Day post since I get a lot of positive feedback on those and a lot of you guys seem to enjoy them. I always enjoying doing them too since I get to try new recipes or fun dishes because I want to share great dishes with you guys and not the usual stuff I always have lol! I generally eat a bit simply but I try making more stuff for these posts.

Just a quick disclaimer- all the foods I mention on here are vegan/plant based and absolutely delicious!

Breakfast

As you probably know if you have read any of my other WIEIAD posts, I am not a big breakfast person. I used to skip it a lot before actually but I know skipping meals isn’t always the best idea so these days I try to have a light breakfast and if I don’t feel like eating anything I just have something to drink.

Recently, I’ve been drinking mung bean tea which my mum generally makes for herself but recently I got my hands on some strawberry flavoured soy milk so I have been drinking that for the last few days. I generally don’t like soy milk a lot but I love strawberry flavoured foods and I will honestly eat or drink strawberry flavoured anything so here we are.

Lunch

As you guys know, I love rice based dishes. I think it’s a great way to cut out gluten and get a lot of different nutrients since you can use different veggies each time. You guys probably also know I have a bit of an eggplant obsession so I usually have some in the fridge that I need to use and on this day I had some fresh spinach too.

I decided to make some rice with stir fried eggplant and spinach. I didn’t really add too much seasoning to either since I was in the mood to eat something simple. I just added a little (too much) salt to the spinach and a bit of salt, red pepper and lemon to the eggplant. Eggplant with freshly squeezed lemon is honestly my favourite thing right now!

I was going to eat the rice plain but my mum had made some curry and wanted me to try it. That probably looks like potato but it’s actually a type of green pumpkin. Not too sure what it’s called in English though- Google just said it’s a type of pumpkin.

Everything was absolutely delicious especially the spinach. I think the spinach was my favourite part of the meal.

Dinner

I had some rice left at night and I was in the mood to eat something delicious but easy to make so I ended up making pineapple fried rice. This is only the second time I’ve ever made it because I used to just order it from a restaurant but I realised it was super simple to make so I’ve been making it on my own these days.

I added carrots, green beans, peas, chickpeas for protein and of course pineapple. Most people add shrimp or some kind of meat but since I don’t eat either of those I thought chickpeas would taste good in this mix and it did. I also garnished it with some spring/green onions and sesame seeds. It was so absolutely delicious- it was sweet, sour and spicy. The perfect combination of flavours. My dad loved it and my sister who is the pickiest eater ever liked it too. She even said it tastes exactly like the one we used to get from the restaurant!

    1. No it’s nothing like that. It’s just a whole different type of pumpkin. If I find the name I’ll let you know.

        1. I’ve only had it a handful of times too and only about three times homemade but I’ve never been disappointed.

  5. I have never heard of mung bean tea before. Oh, what’s your mom’s recipe for the curry that you had for lunch?

    1. Yeah I didn’t know about mung bean tea too until my mum started making it. She heard about it from her brother. I’ll share the recipe this Friday!

  6. I love any drink that’s in strawberry flavor. It is delicious. Also love pineapple in food. I especially like Hawaiian pizza which has pineapple chunks. I’ve never seen green pumpkins. I guess they are the kind that can be cooked as vegetables? Love to try them.

    1. Yes I absolutely love pineapple in dishes as well. I always add some to pizza. The green pumpkins are more common in Africa and South Asia from what I’ve heard. If I find a name I’ll add it but in my language we call them “Kaddu” and they’re available at most Indian stores if you want to try them.

  11. I love pineapple fried rice! Haven’t had it in ages though. How sweet is that strawberry soy milk though? I have usually found the flavoured milks to be a bit too sweet

    1. This one isn’t sweet at all which is why I like it. It’s actually very simple. Like it doesn’t have that fake strawberry flavour a lot of stuff has. It just tastes like real strawberry and milk.

  12. This looks amazing PooJa. I rarely eat breakfast either!. I’m trying to make myself. just to have more fiber and protein but i often forget to eat. 💖

    1. Thanks! Yeah breakfast is a bit of a complicated meal but I’m actually doing it for the protein too. I feel like I don’t get enough when I skip breakfast.

  13. I love eggplant but im always intimidated with things u have to cut lol i really dont know how to store veggies or cut them so thats why as a vegan i just been eating frozen stuff. Thhese are interesting dishes i only see from restaurants cant wait to see moree!!

    1. Yeah it’s hard to cut right which is why I ask my mum to cut things for me sometimes 😅 There are a lot of great frozen options too so I don’t think you’re particularly missing a lot. Thank you!!
