What I Eat In A Day

I know a lot of my readers enjoy my food related posts so I decided to do another “What I Eat In A Day” post today. I don’t know why but every time I do one of these posts I just end up making Indian food lol. Honestly, I swear I eat other stuff too. But to be fair I do eat a lot of Indian dishes these days.

Anyway, as always, everything mentioned is plant based/vegan.

Breakfast

For breakfast I had an orange and some chamomile tea. As usual, I forgot to record it. I mean, it’s way too early in the morning you guys. Who has time to plug in the ring light and set everything up that early. So, you know the drill. Just use your imagination and imagine me eating an orange and drinking some tea. I love oranges by the way, they’re my favourite fruit.

Lunch

What I Eat In A Day

For lunch, I wanted to eat something simple, filling and hearty. So, I decided to make some oil-free beans and rice. We generally call it beans and bhaat in my language (Gujarati). And I believe in Hindi they call it rajma chawal.

Anyway, the beans and rice turned out perfect. Especially the beans. They were so delicious and just one of the best comfort foods. I had the meal with some cut up cucumbers, avocado and onions for fresh breath all day…

Dinner

What I Eat In A Day Vegan

For dinner, we made some matar tofu and naan. Usually people make matar paneer but paneer is made of dairy so I replaced it with tofu. The curry turned out perfect. It was so incredibly delicious. Here’s my recipe for the matar tofu if anyone is interested:

The naan was really great too. I ended up having like two naan’s and a bit of leftover rice with the matar tofu curry. It was such a satisfying meal.

Conclusion

Both big meals for the day were so delicious. I would so recommend trying the matar tofu recipe if you haven’t. It’s relatively simple and won’t take that much time to make. If you enjoyed this post and would like to see the video version of what I eat in a day, you can view it here:

  4. We are living abroad, but we are still Indian at heart. Therefore, there is no need to change the eating habits as well. Eat whatever food you want to eat. Every dish looks so delicious.😊👍👍

  10. Yes hard to beat a good Indian meal. We have an Indian Store opening up a three minute walk from our home so will be giving it good business. 🙂

  12. Rajma Chawal is very popular in north India, but I like a combination of Dal Chawal more. Kadhi Chawal and Chhole Chawal are two other popular combinations in India. Have you tried these dishes?

    1. I don’t like dal very much but I do like kadhi chawal and whole chawal.

      1. Kadhi is either made with buttermilk or curd and you are a vegan, how do you make Kadhi then?

        1. I use vegan yogurt made from coconut. It works the same as regular yogurt.

  13. I love vegetarian food. Though I take dairy too. So paneer is a good substitution. Besides finding tofu here is difficult. Your food looks great.

I would like to try them all 🙂 Today I had mango and peach for breakfast, school provided McDonalds chicken sandwich for lunch, and I had leftover vegetables for dinner with Asian pears. I am loving the food scene here, great variety of fresh produce is incomparable to any other place I have been!

  29. Love your matar tofu. Tofu is best prepared with Indian sauce or Indian spices. Since tofu doesn’t have much flavor by itself and doesn’t allow the flavor to get inside quickly. So the Indian spice and sauce and stewing for a bit longer time all make sense in the preparation of tofu. They are the match made in heaven.

    1. Thanks so much. I very much agree. Since tofu has no flavour on its own it works well with dishes that are more heavily spiced and cooked for longer times. I hope you try this recipe, I think you’ll enjoy it.

  30. Beans and bhaat are one of my fav meals. It’s healthy and tasty 😋 I always like to have it with some salad but since tomatoes got as expensive as gold, we have stopped having salad. 😐 We now have curd after lunch and a small piece of jaggery after dinner.

    1. Same, although bhaat is like my favourite thing in the world so I can eat it with almost everything 😅
      Haha yes, the prices for tomatoes are crazy right now over there so it’s not possible to eat them often. I love jaggery and have small pieces of it after meals sometimes too 😊

  43. It is funny that when you post about Indian food, it coincides roughly with the last time I ate Indian food. That just means we both eat a lot of Indian food, though. 😅 I first discovered it while living in Arizona; it’s far more prevalent there. When I moved back home, I couldn’t find anywhere reasonably close to acquire chettinad or hyderabadi dishes. Now that a few more places have opened up, I’m making up for lost time.

    1. Haha that’s a cool coincidence 😅 That sounds amazing. We don’t get Chettinad food here either. We mostly get North Indian, Gujarati and Punjabi foods. That’s awesome, glad you have some good options now.
