I’m back with another “What I Eat In A Day” post because some of you enjoyed my last one and honestly I just love making them. I hope you enjoy it.

Breakfast

What I Eat In A Day | Starbucks Pink Drink

For breakfast, I had about half of this Starbucks Pink Drink. It was great.

Lunch

Vegan Sweet And Sour Pork Recipe

For lunch, I wanted to try something different. So, I made this vegan sweet and sour “pork” from scratch for the first time. It was so delicious. I loved it. This is the recipe I used.

Dinner

For dinner, I had some of the leftovers from lunch.

And also one and a half burgers… I couldn’t help it- they were so good. My mum made them from scratch. I could have eaten more but had to stop myself…

Final Thoughts

Today was a good food day. I certainly had a good time with all the food. I would so recommend the sweet and sour soy recipe. It turned out so good and literally took like half an hour to make with minimal episode.

  2. I like your “What I Eat In A Day” posts! I’m trying to eat vegetarian, but am still having difficulty finding things to eat that agree with me. I appreciate the recipe. Cauliflower sounds like a good substitute for soy or tofu. Thank you!

    1. Thank you! Yup, you can definitely can use cauliflower instead, that would taste so good too.

  3. What was in the burgers? What type of meat substitute was used?

    Everything looks delicious! 😋🤤😋

    1. She made patties using sweet potato, chickpeas, soy mince, spinach, beetroot, onion, carrot, garlic and chickpea flour for binding. Thank you, it was! 💗😊

  4. Burgers sound exciting to me, I love meta burger which is meatless. Do you know what I mean?

    Today I had some leftovers, last night for dinner we had potatoes with sausage and salad. What I made is poblano peppers with cheese, wrapped in bacon. I bake them in an oven, they turned out great, not spicy enough for my taste.

    1. Yup, I do- meatless burgers are so good I feel they’re lighter and easy to digest.

      Ooh nice and I totally get it, I like a bit of a spicy kick in my food too.

      1. Speaking of burgers I discovered fish burger last year, which is pretty amazing too. They have salmon ones and the ones with fish and vegetable protein

        1. That’s so interesting, I didn’t know people made burgers from fish.

          1. Yes, apparently it’s a new thing

            1. I don’t think we have it in Kenya yet, I haven’t seen it anywhere.

  10. Thanks for the link to the recipe for the sweet-n-sour. I like having more options that both Mrs B and I can try. That one fits perfectly, as she’s vegetarian and I’m kosher 😀

    Is the strawberry drink like a milkshake? Or more like one of their frappucino drinks but strawberry flavored? Or something totally different?

    1. and just watched the video and saw that Starbucks was a coconut milk coffee drink. That answers that 😀

    2. This is perfect for both of you then, no meat but a good amount of protein from the soy chunks.

      Yeah, it’s a coffee drink although there’s like barely any caffeine in there lol 😅

  16. This all sounds and looks good. I like the sweet and sour (and soy) flavors so think I would enjoy what you made for lunch. There are good colors in your food (starting with pink). I could be wrong, but I think the look makes a difference.

      1. Yea so Yummy, my another favourite is stir fry chopped leafy vegetable adding grated coconut and salt with mustard seeds and turmeric with chopped green chilly.

        1. That sounds so good, I’ve never had that. We rarely add coconut to our stir fries and curries.
