What I Eat When I’m Sick
I started out the year prepared to share a what I eat in a day post every day. And then I decided every week. And now it’s apparently once every three months lol. Anyway, as you guys know I’ve been pretty sick recently so I haven’t had much energy to cook too much stuff. Today though, I woke up craving Korean food and I estimated the dishes would take an hour to make but they ended up taking almost three hours to make lol. Thanks to all the hours spent cooking I didn’t have much time to write a post so I thought why not share a post about what I eat when I’m sick.
Generally, I like things that are hot, flavourful and soupy when I’m sick. And Korean food is perfect for that because they have so many delicious stews that are packed with flavour and warm and comforting. I make Korean food at least once or twice when I’m not feeling well and I had been craving this combo for ages. So, I decided to make bibimbap and doenjang jjigae which are two of my favourite Korean foods. Of course, I made the vegan versions of both and I used my own recipe versions of both but they were inspired by Mommytang my favourite vegan Korean YouTuber.
Anyway, this is what I eat when I’m sick or just feeling a little under the weather:
Doenjang Jjigae
Doenjang Jjigae is Korean miso stew. It’s not like the Japanese miso soup that many are familiar with. Although I do enjoy that one too, I feel like I just really prefer the Korean stew more. Since it’s a stew and not a soup, there are more ingredients to it and it has a stronger flavour. I usually put an entire block of tofu in mine which is 55g of protein according to the package. And the protein from the paste adds to the overall protein count too.
The taste of the stew is so warm, refreshing and comfy. It’s like one of those meals that just gives you so much energy especially when you’re not feeling well. The blend of flavours comes together so well and it’s quite easy to make because you just have to roughly chop up everything and add it to a pot of boiling water along with the miso paste. That’s literally it!
Bibimbap
This is the dish that took me longer to make because it’s a bit more complicated than the stew. Obviously, it’s different than the traditional Korean bibimbap which is a very popular mixed rice dish. You can learn more about it here. However, I think it’s pretty close to the real thing because the only thing different is that I didn’t add any animal products.
You can use whatever veggies you like for bibimbap, that’s what I’ve heard everyone say in their videos. However, there is a proper/traditional way to make it which is what I prefer most. With this method, you cook each vegetable separately because they all have different optimum cooking temperature. I added carrots (the only dish I can bear to eat carrots in lol), spinach, cucumber, courgette (zucchini), white onions and spring onions (green onions). If you want to up your protein you can add a cup of boiled chickpeas to it too. I was going to do that but forgot to lol. But it’s fine because the stew was higher in protein than I needed anyway, for my weight I’m supposed to eat a minimum of about 45g of protein a day and the stew was already about 60g of protein.
It took me ages to prepare and cook everything but it was SO worth it! I enjoyed it with seaweed and the miso stew. Such a perfect combination.
Chocolate
My mum makes the most delicious homemade chocolate and I couldn’t resist having a piece. The perfect way to end the meal.
Final Thoughts
So, that’s what I eat when I’m sick. I spent so much time making these dishes that I ended up eating them for both lunch and dinner. Which is fine because I thoroughly enjoyed them both times. Plus, it’s such a healthy meal. It’s packed with protein (the stew alone is about 60g of protein) as well as fibre (there were three bunches of spinach in the rice dish along with lots of other veggies).
And it’s low calorie which is perfect since I haven’t been excising much because I feel too sick/exhausted these days. I don’t count calories because I don’t care, I eat what I feel is best for my body and stop when I’m full. I try not to overeat or under eat. But if anyone is interested in calories, I had about 1300 calories in the day (perhaps a little more or less) which I think isn’t bad at all considering I didn’t move my body much. For anyone on a diet trying to lower calories, this is such a good diet meal. So delicious and still quite healthy.
