Sushi Vegetarian INTI

I feel like I haven’t done a What I Eat In A Day post in ages. I wanted to start sharing more food related content this year and did some filming for it last year. Today, I wanted to share what I ate on the last day of 2025. I hope you enjoy it!

If you would like to see the video version of this post, you can check it out on my YouTube:

Breakfast

a man on a boat says i hope you 're hungry for nothing while holding a silver tray | What I Ate On The Last Day Of 2025

I had a giant bowl of nothing lol. Honestly, I slept in because I knew I would be up till late and so I didn’t feel the need to have any breakfast.

Lunch

For lunch, I made some kimchi fried rice. It’s extremely easy to make and really delicious. That’s exactly the kind of thing I wanted my last lunch of the year to be.

With the rice, I had some cucumber and a pack of seaweed. Kimchi fried rice feels like it’s missing something without the seaweed. The kimchi was so fermented and tart, it was perfect for making fried rice with.

Dinner

For dinner, we went to a NYE party at INTI. You can read about the full experience here. We started with the truffle mushroom and avocado crisp rice with was delicious.

Next we had these dumplings which were probably the best dumplings I’ve ever had.

Next we had this amazing crisp enoki sushi.

And for the main course we had this creamy mushroom risotto which was served to be garnished with a green chutney.

Lastly, we had this matcha chocolate covered lemon cheesecake which was too tart for me but I enjoyed the granola it was served on and the chocolate covering.

  9. You eat well Pooj!!

    1. I try to, food is important!

  10. I really do enjoy the food posts you do.

I think you are lucky that you can sleep in. My body wakes me up at 5am now. If I’m lucky, I can “sleep in” until 6am, hahahaha.

Do you skip breakfast often? I know I skip way more often than I should, but I’m just not hungry that early in the morning, you know?

    1. Oh I’m like the opposite, if it wasn’t for the alarm I would sleep all day lol.
I never eat breakfast, I don’t feel hungry in the morning either. I’d rather have some tea or something instead of food. I know skipping breakfast isn’t good but some of us just don’t have an appetite in the morning 😭
