I’m back with another “What I Eat In A Day” post because some of you enjoyed my last one and honestly I just love making them. I hope you enjoy it.

Lunch

What I Eat In A Day

I didn’t have breakfast so let’s skip to lunch. For lunch, I had some beans and rice. A very simple yet satisfying meal. When I was younger, I didn’t like beans very much but as I’ve gotten older my tastes have changed.

Dinner

What I Eat In A Day

For dinner, I had some vegan Thai red curry that I made. I make it quite often but this time may have been the most delicious yet. I also had some baked cassava that my mum had made. For those of you that haven’t had cassava before, you’re seriously missing out.

I also had this vegan gummy which was so yum. It had a really naturally taste to it and it wasn’t too sticky.

  1. I like both dishes you made. Beans are really great, I also like lentils, we eat lots of those.
    Today I had omelette for breakfast and mashed potatoes with salad for lunch. For dinner I’m not sure what I will make, maybe some leftovers. I like it when people post what they cook, I’m interested in spices they use.

    1. I still haven’t really gotten into lentils haha. I’ll eat them but don’t love them. That sounds yum, hope you had a good dinner.

      1. I know the fish you would love, it’s lemon lentil fettuccine. So yummy even though it has lentils

  7. Ive not eaten cassava in years. Just reading that made me crave baked cassava. I had some Thai on Wednesday and it was good. Your dish looks interesting. Maybe consider dropping a recipe for us one day?

        1. Yeah, I’ve been trying to avoid social media this year. It gets too overwhelming at times.

          1. It sure does. I’ve limited my engagement to twice a week since the start of this year. But i was gonna reach out with a request for Exploring Poetry.

            1. Yeah, it helps to limit social media time. But feel free to reach out for that, I still respond to messages etc about once a week on IG.

  8. What kind of beans were they? And is that red onion next to the rice and beans?

    It is 4am here, so I haven’t woken up enough yet for my body to be hungry. I suspect I’ll be having a cup of mixed fruit for breakfast and then either a frozen pizza or homemade chili for late lunch. which will also be my dinner. Since I don’t work on sunday, I’m not expending calories so I’m never as hungry as during the week 🙂

    1. Yup, sure is. I love that combo. I think it’s regular red beans.

      Ooh okay, yeah most of the time we’re not as hungry when we aren’t doing much.

  14. Quite a healthy food choice, Pooja. I too like beans (both red and white) very much. I like a mixture of beans, chickpeas, potato, onion and green chili dipped in tamarind sauce. This is called Chana Chaat here.

    1. Oh yeah, I’ve had Chana Chaat- it’s really delicious. We add some yogurt to it too.

  16. I love curry but haven’t tried cassava, Pooja. What is it like? It isn’t something we typically see here.

    1. Cassava is really delicious. It has a similar texture to potatoes but the flavour is quite different.

  17. Beans with rice is a good combination. I like having lighter meal in the evening.

    Cooking is an interesting skill I realise. Though I am not a good cook neither a regular one.

    1. Hi Lokesh, good to see you back here. Thanks so much, yeah I love to cook and try new things. And I try to make them as healthy as I can. I’m good, hope you’ve been well too. How is everything with your studies?

      1. So things are under control and better my side also. My exam was in January. It went good. There’s some confusion regarding the result but it will be solved in the end of this month.

        I was able to study regular for long hours. Things are in my favour. I am keeping it healthy.
        History is interesting if treated properly. I met so many people who followed the path that I am following, and are stable successful at present.

        While getting enrolled in a Phd program I will search opportunities for the Assistant Professor job.

        Central Universities have their own criteria. However the state government conducts a direct recruitment exam.
        In July such an exam will be conducted. I will apply there. I am preparing for it.
        It is much similar to the exam I qualified recently.

        In a PhD you have study lots of things, writing your own research papers and presentations based on them. So it does feel heavy in the beginning.
        I will learn to understand new things, tackling them correctly, and adjusting myself at some extent. It is a collective job!

        1. Yes, I’m sure you’ll learn how to adjust your schedule and do your best along the way. And best of luck with your exam in July.

  19. So Yummy dishes, is it peanut or beans ? I prepared raw steamed peanut with grated coconut for a change its so healthy. Pooja, please don’t skip breakfast, if you like, take some oats or a steamed large banana for breakfast.

    1. That’s beans, I don’t eat peanuts because I don’t usually like them lol. I do like them steamed or boiled though. I just don’t like them roasted.
      Yeah, I want to start eating breakfast and make it a habit.

  22. I agree with Cindy… looks good but not a lot! The foods you made look delicious and interesting.

    I also enjoy beans and rice… usually brown rice and black beans. I usually grate some cheese and heat it up, then add salsa and it feels like a complete meal. Today, I started off with a bowl of fruit, nuts, seeds and fibre cereal that was delicious, and for lunch made a wrap with poached eggs, avocado, greens, and grape tomatoes. Tonight it will be homemade pizza for pizza and movie night.

    1. Like a burrito bowl, yum! That sounds like a delicious and healthy day of food!

      1. I do my best with nutrition, with the odd cheat day of course!
