What I Eat In A Day

I feel like I haven’t done a “What I Eat In A Day” post in quite a while so I wanted to share one today. As you guys know, my diet is a bit restricted due to health reasons. My primary goal is never to lose a bunch of weight or anything like that. It’s to eat as healthy as I can. So the majority of the month I eat oil free and gluten free. And all dishes mentioned are vegan/plant based too. Hope you enjoy the post!

Oh, and if you want me to share any of the recipes minus the cauliflower bites since I already shared that let me know in the comments and I’d be happy to do so.

Breakfast

Vegan Oil Free Cauliflower Bites Recipe

As you guys know, I am absolutely not a breakfast person. In fact, I almost always skip it and I’ve mentioned this on my other “What I Eat In A Day” posts. But today, I decided to eat some of these cauliflower bites. We had made them before and decided to make them again because they were so delicious. And by we I mean my mum lol. So for once, I actually had breakfast and loved it. And if you want to try them yourself, I’ve shared the recipe before. You can read the written version or watch the recipe on YouTube:

Lunch

For lunch I had some rice with chickpea curry, steamed okra and sliced cucumber. It was really delicious. I’m not used to having breakfast so I wasn’t too hungry. I just wanted to eat something simple and delicious. And this was perfect for it. Minus the okra, I don’t like the taste of okra or the texture but it’s really good for health especially for women so I eat some once in a while.

Dinner

For dinner, I ate this burrito bowl that my mum made and I paired it with some spring onion kimchi that I had been trying to finish because I needed the jar for some other kimchi I wanted to make lol. The kimchi cycle never ends. But it was actually a good combo. Like the kimchi brought an extra spark to the meal.

    1. You should, they’re actually really good steamed. Not the best since I don’t like okra but still not bad at all.

  3. About 4 years ago, when I worked in Death Valley National Park, the cook made the employees some sliced okra that had a yummy lemony flavor (wish I knew the recipe for that…usually I have fried okra which I always like.

    1. Wow, that sounds so delicious. More sour okra definitely tastes better. I rarely have it fried but I’ve had it a few times and that’s one way I actually liked it.

      Yeah, okra helps with oestrogen production so it’s good for women.

  8. I love okra/ Bhindi, but never had it steamed. Cooked in traditional way, it’s amazing. This sends a very healthy menu.

    1. Thanks so much. Yes, the traditionally cooked okra is quite popular but I like it steamed since it’s healthier. I don’t love the taste though lol.

        1. Yeah, I’m not a fan of that although it tastes delicious. So I try to look for different ways to eat them.

  17. Hi Pooja! I usually don’t eat breakfast. normally just a bowl of cereal or a protein bar. I actually enjoy, eating cereal more for dinner rather than breakfast. I ate a southwest chicken bowl at Applebees for Lunch a couple days ago. So good! I need to make curry again 🙂

    1. I’m a big fan of eating breakfast foods at dinner too! I had a full British breakfast for dinner the other day and loved it. 🙂

  18. I love fried cauliflower bites and fried okra bites. Fried okra bites are delicious and don’t have the same texture as steamed okra. Your meals sound yummy, Pooja. ❤️

        1. Oh nice, yeah you can make a mean curry with chickpeas.

          1. Yes, delicious! I also make a chickpea salad with lentils, grape tomatoes, grilled peppers and feta, plus balsamic vinegar and olive oil, herbs and spices that’s really nice for lunch after long distance cycling.

  24. A very healthy meal Pooja. All foods I love and eat,except I haven’t ate okras in a while. I do eat lots of chickpeas, and will mix them with sweet potatoes. I will also make an omelette with the flour or bake with it.

  25. All of those dishes looked delish. Very bright and colorful. Presented very well. I am seriously thinking about changing the way I eat. I am not getting any younger. Turning 49 has made me think a lot about my overall health in many ways. I know what I need to cut back on, but it is so hard to do when you have a sweet tooth. I have lost a lot of weight around the midsection, I am happy about that, but I just want to get over this pneumonia so I can go back to work, this really sucks.

    1. Thanks so much. Yes, a healthy diet is vital especially as we get older. I know it’s tough to let go of sugar. I’ve been having a hard time with that too but I’ve had to give it up and I’ve been eating dates instead. Hope you recover from the pneumonia soon and are able to get back to work. Ginger is really good for recovery, try drinking ginger and lemongrass tea. It’ll help a lot.

            1. Happy to have helped. I used to get bronchitis every year when I was a kid and I know how annoying and difficult the recovery process is. This helped me a lot and really improved my immunity too. I hope it does the same for you.

  27. I dont know how to make it but we have something called ochro rice where I’m from. I strongly believe it’s one of those dishes that you can’t have from just any one, but the very few occasions I’ve had it, it was great. This is coming from someone who didn’t like ochro because it’s slimey.

    1. That’s very interesting. I don’t like the slimey texture either but I think some methods of cooking can work well. I’ll have to Google ochro rice and learn more about it.
