Introduction

I haven’t done one of these posts for a while now because I have been taking a semi-break and only been posting six word stories and interviews so I am super excited to share this post with you guys. As I mentioned in an earlier post, I have been trying a lot of new foods and just trying to make things that I don’t normally make often. Thanks to this I have discovered so many new dishes I now really like and make often and I have a bunch of food related content for you guys.

I decided to share todays meals because generally I make a lot of East Asian food- usually Korean- because I really do love those but I have also been trying to make more Indian/South Asian dishes. I generally avoid making Indian/South Asian food because I find it a bit time consuming and I feel like my sister is better at making them than I am so I leave that to her. However, on this day I was like no- I’m going to make some Indian stuff myself. Anyway, I’m going to stop rambling now so that we can finally get into the good part of this post- the food!

Disclaimer: I don’t usually eat like this but I wanted to try new things for this post and make it fun so I decided to try some not exactly healthy stuff which is fun once in a while! All the products used/mentioned are vegan.

Some of you guys probably know this if you have read my earlier What I Eat In A Day posts but I don’t generally have much for breakfast because I am not a morning person and eating in the morning makes me feel kind of gross. I know a lot of people love having a big breakfast but I am just really not one of those people.

For breakfast on this day I started with some Silk milk which is a vegan alternative milk that I am absolutely obsessed with. I am pretty particular about alternative milk because some of the brands really water them down but I have noticed that Silk is pretty creamy and delicious. I hate oats but for some reason everything I had for breakfast on this day had oats in it and I loved all of it! I think I don’t hate the taste of oats I just don’t like porridge because of its texture. It just really grosses me out for some reason.

Anyway, I had some oat milk from Silk and I also tried Bobo’s strawberry flavoured Stuff’d Bites. I have tried one thing from this brand and very much enjoyed it and as expected I loved the Stuff’d Bites too (I got some more today but in a different flavour!). They are super delicious and the stuffing is the perfect amount of sweet and sour. I liked the first one so much I ate another one haha. It’s a little dry because of the oats but I was drinking oat milk with it anyway so I didn’t mind at all. If you have never tried Bobo’s products I would HIGHLY recommend them- they are super delicious and one of my new favourite treats.

Unfortunately, I did not take pictures of my breakfast because I didn’t think I was going to be making this post on that day but I decided to later on in the day. But I have added some images I found on Google in case anyone is interested- I know when it comes to stuff about food the best part is the pictures/videos.

Lunch

I had no idea what I was going to make for lunch so I did what I usually do which is YouTube a bunch of recipes till I find something I like and it totally worked because I found something that I am now super obsessed with- Shri Lankan eggplant curry. I had a giant eggplant in the fridge that I needed to finish and I usually make Korean eggplant with it but this time I wanted to make something new.

I have never had Shri Lankan food, authentic or otherwise, so I have no idea whether this tasted authentic or not but all I know is that my taste buds loved it and my mouth is literally watering just thinking about it. This is the recipe I used as a basis but I changed a couple of things like I stir fried the stuff that was fried in the original recipe and I added less curry powder and no tamarind juice and used lemon and water instead.

So, definitely not authentic but still extremely delicious. I ate it with some rice and it was a simple and delicious meal. Plus, eggplant cooks really fast so it didn’t take too long to make- I was done with everything in about forty minutes or so. It was also super light so I didn’t feel lazy in the afternoon and filmed a bunch of reels for my Instagram which was awesome.

Snack

Of course, I have to have some snacks in between meals because that is just who I am as a person lol. I had some GoGo Quinoa Puffs in the flavour salt and vinegar. They were okay, not the best things ever. The quinoa made them kind of dry but they weren’t too bad. I would definitely not get them again though- they were pricey for the amount and the taste wasn’t worth it either if I’m being totally honest. I have the siracha flavour as well but I haven’t tried those yet- hoping they are better but I don’t have very high hopes for them. It may be because they are gluten free because a lot of times I don’t really like the taste of gluten free foods. They taste very gluten free- I don’t know how to explain it but if you have ever had regular pizza and then gluten free pizza you will probably know what I mean.

Dinner

At night, I got kind of lazy and did not want to do a lot of cooking so I decided to heat up some frozen samosa’s and make samosa chaat. Samosa is probably one of my favourite Indian foods but I rarely eat them because they are not the healthiest thing out there but I felt like I wanted a treat and I didn’t want to eat boring healthy foods if I was going to make a post about it so I decided to heat some up. The samosa’s I used are from Shana and are available at most Walmart’s. I prefer the Deep ones but I couldn’t get them the last time I got groceries so I got these instead and they are pretty good too.

I topped the samosa’s with some chickpea curry, chopped tomatoes and onions and later added some Silk coconut yogurt.as well as some chutney. I know authentically people also add some sev but I didn’t have any so I added some Haldiram Bhel Mix which still tasted pretty good. I’m pretty sure I added too much by “accident” though…

I have made this before so I knew I would enjoy it and of course it’s always fun to eat some Indian food after a while- made me miss my mum’s cooking though!

Dessert

After a kind of greasy, junk-y dinner I wanted something sweet so I had one of these chocolate cups. They’re from b2b and this one was mint flavoured. They are absolutely delicious and I am obsessed with them lately. Seriously, please stop me I have been eating way too many of these.

Korean Sour And Spicy Tofu Recipe

Korean Sour And Spicy Tofu

As you know I love Korean food and I love tofu so obviously this Korean sour and spicy tofu dish is one of my favourites. It’s quite simple to make and does not take very long which is always great when you have a million assignments to do every week. I’m not sure how authentic it is because I’ve seen some recipes for this on YouTube which is what inspired me to make this but they were all a little different from the way I make mine. A lot of them also fried the tofu which I’m sure tastes amazing but isn’t very healthy so I usually just stir fry it.

I mentioned that I had made this on my latest What I Eat In A Day post and I promised you guys the recipe so I decided to share it today. I really hope you guys try this because it is so delicious and super easy to make. If you like it you can even make it in bulk and freeze it which is what I do sometimes. In case you don’t have all the Korean ingredients at home I would recommend checking at your local grocery store or at any Asian stores because most of them carry Korean items. Also I apologise for the quality of some of the images but it’s way harder to simultaneously cook and take pictures than I assumed it would be…

Ingredients

1 block of extra firm or firm tofu

1 white onion

2 spring onions

1 tsp of minced garlic

Gochujang

Soy sauce

Ketchup

Molasses or sugar or any kind of sweetener

Recipe

  1. Chop and stir fry the onions on a pan with a little bit of oil and salt till they are well cooked and put aside.
  2. Cut the tofu into bite sized pieces as shown in the images below, add a little salt and stir fry them till all the pieces are golden brown. To make the tofu extra crispy you can add a bit of potato starch to them before you stir fry them.
  3. Leave the tofu on the pan and add in the onions but turn the heat off so it doesn’t burn.
  4. For the sauce mix 4 tbsp. of soy sauce, 2-3 tbsp. of gochujang, 1 tsp. of minced garlic, 1-2 tbsp. of ketchup, 2-4 drops of molasses or 1/2 tsp of sugar and 2 tbsp of water. If you don’t want it too be too sour add a little less ketchup and vice versa. If you don’t want it to be too spicy start with 1 tsp. of gochujang and than you can add more later on if you like.
  5. Mix the sauce, tofu and onions together on the pan and stir fry on low to medium heat for a few more minutes till the sauce thickens up and everything is evenly coated.
  6. Chop the spring onions into small pieces and use them as garnish. You can also add some sesame seeds as garnish.
  7. Serve with rice, kimchi (optional) and seaweed (optional).

What I Eat In A Day #4

Introduction

I really love doing what I Eat In A Day posts so I was excited when I got a couple of requests for them! I have done a couple of these posts last year because I thought they would be a fun new addition to the blog and since I do talk about food and recipes a lot I thought it would be fun for you guys to see what I eat in a day. I also thought it would be fun for people trying out veganism or going plant based this year since apparently a lot of people are trying that. All the food below is vegan/plant based and the recipes for two of them are hopefully coming soon depending on how busy I am next week and the week after. Even if you may just want to add a few vegan/plantbased options to your diet some of these may be fun for you to try out.

I also wanted to add that this is not how I generally eat but to be honest my meals these days have been a bit boring because I’m trying to eat healthier so I try to make everything from scratch except I don’t have a lot of time because of university so I usually end up eating the same pretty simple meal for lunch and dinner. I feel like you guys don’t want a What I Eat In A Day post where it’s just me eating rice and veggies (as much as I love eating that) for most of my meals. I do have cheat days sometimes where I eat stuff I want which may not be super healthy for me because it’s okay to eat like that once in a while and I had one of those a while back and I was like perfect I can finally do a What I Eat In A Day post now! Anyway, I hope you enjoy this post!

Breakfast

As you may know if you’ve read my previous What I Eat In A Day posts you know that I generally don’t eat breakfast but I have been waking up super early these days because I have early morning classes so I have started eating breakfast because otherwise I get too hungry during my class. I usually eat like fruits and yogurt but today I was like I’m going to eat a what I feel like. So, I ended up making some waffles- they are frozen and from a brand called Nature’s Path. If you haven’t tried these you absolutely have to they’re so delicious! They’re nice and crispy on the outside but soft on the inside. I love them.

I also had some tofu that I needed to use up so I decided to make some tofu scramble. I made two types and they both turned out delicious. I’m a huge fan of tofu scramble and I make it all the time but for some reason I wanted to switch things up so I decided to make it differently and I’m glad I did because I found a new favourite way to make tofu scramble. Also my phone keeps autocorrecting scramble to scrabble for some reason so if you read tofu scrabble instead of scramble at some point just ignore it…

I really wanted hashbrowns too but unfortunately I didn’t have any but I did have some frozen fries so I made those instead. That’s basically the same thing right lol?

Lunch

                             

I was extremely excited for lunch because this was something I had been wanting to make for a while now! I was going to make the Gardein sweet and sour porkless bites. I’ve made these before so I know they’re delicious but last time I didn’t have bell peppers or pineapple so I couldn’t make them the way they are supposed to be made. This time I had all the ingredients so I was finally able to make them properly and I honestly can not even describe how good they tasted. Like seriously they were amazing. If you haven’t tried these I would highly recommend them even if you aren’t vegan because the flavour is in the sauce that comes with it.

I generally try to avoid alternatives like Gardein because they can be quite expensive and I don’t think they are very healthy but they are super convenient and they taste amazing so they can be great as a treat once in a while. I ate the porkless bites with some rice that I had made because I love rice and it’s just so delicious with everything and so easy to make.

Dinner

       

I had some leftover rice from lunch and some leftover tofu from breakfast so I decided to make some Korean style tofu for dinner. I like using my leftover as soon as possible because our fridge is not very big so I usually just end up using leftovers the same day or at least in a day or two.

As I mentioned I love rice and I really love Korean food so this tofu has been my go-to these days. It’s so simple to make, it’s super filling since it’s tofu and it just tastes so good. I never used to be a huge fan of tofu because I always thought it was kind of blend and gross but I think I just was not cooking it correctly. Now that I know how I like my tofu I make it all the time and it turns out amazing. The recipe for this tofu side dish is coming very soon so be on the lookout for that. I ate this with some Mother In Laws vegan kimchi I had in the fridge because you can’t have Korean food without kimchi. It just makes it so much better.

So that was what I ate all day. I know I usually add some snacks or something but I didn’t have any snacks on this day so it was pretty much just this. I also didn’t have anything special to drink because these days all I drink is water or Bubly.

Veganuary

I read that this year more people are trying out veganuary than any year before which made my vegan heart very happy to hear. Every year people try eating vegan, vegetarian or plant based in January and a lot of people choose to continue to eat that way for the rest of the year or at least attempt to decrease their meat and dairy intake.

People do veganuary for different reasons each year. A number of people do it for ethical reasons as they believe the killing of animals for food is unnecessary. Others do it for health reasons as they believed eating a plant based diet is healthier. Some people try out veganuary in an attempt to lose weight. A lot of people these days are trying to eat plant based as it is better for the environment. Most people in my opinion do it for a bit of all the reasons which I think is really great.

I have been eating plant based for a few years now and I thought this year I would share some tips and tricks with you guys in case anyone is trying out veganuary or just thinking about reducing their meat and dairy intake in general. Here are some tips to help you with veganuary this year:

Do Your Research

Just like with anything new you try it is very important to do your research and find out exactly what you are getting into. I would highly recommend checking out some vegan bloggers, YouTubers, Instagrammers and more to see what the vegan lifestyle is like and to get ideas on what kinds of foods you can eat. I would also recommend doing your research because if you have not been vegan your whole life your body may need a certain amount of certain things and that way you can add vegan/plant based alternatives to your diet accordingly. I personally tend to get low on iron easily- it runs in my family- and that’s why I try to eat more iron rich foods daily to make sure I am getting enough iron.

Another reason I would recommend doing your research is because a lot of very popular vegans that you will find online will talk about products that they are probably sponsored by that are insanely expensive and totally unnecessary. Instead do your research and figure out what you REALLY need not the stuff being advertised by influencers. Not saying all of it is useless of course- some of it may be super helpful but you just have to be very careful.

Try New Things

Think about veganuary as an adventure and instead of sticking to the same meals you generally eat but with vegan alternatives try branching out and making new recipes you have not tried before. There are so many amazing vegan recipes out there (I know because my mum send me a bunch of them every day 😂) and a lot of them are super easy to make.

I know that I personally had really not eaten a lot of dishes before I went vegan. I usually stuck with the same things I would normally eat. However, after going vegan I have tried so many new things and I even tried a lot of international foods which was so fun. It was the first time I made Korean, Vietnamese, Thai, Japanese, Ethiopian and so many other types of foods from all over the world. I’ve talked to a lot of vegans who say the same thing too- that they ended up trying a lot of new things after going vegan.

You can have a lot of fun with a vegan diet if you try and making or eating new foods will help you get used to eating vegan much faster than if you stick with the same foods you generally eat.

Avoid Replacements And Alternatives

There are so many alternatives and replacements for literally any products you can think of. There are vegan replacements, plant based replacements, gluten free replacements, grain free replacements, paleo replacements, keto replacements and the list can literally go on for like another hour at least. Although this can truly be a blessing when you want to make a dish that needs specific ingredients I think it can some times also be a bit of a curse because constantly using replacements or alternatives can be quite expensive and more importantly it is not very good for your health.

Vegan alternatives are incredibly expensive and this is actually one of the main reasons why so many people avoid going fully vegan because truth be told not everyone can afford to eat these alternatives on a regular basis. However, as someone who tries to eat less alternatives and eat as many home cooked meals as possible I can confirm that’s super easy to eat vegan without using alternatives on a regular basis. Like I mentioned on my first tip you just need to do some research and find recipes where they don’t use meat/dairy alternatives and use homemade ones instead.

I know that a lot of these alternatives also talk about how healthy they are but truth be told they probably are not as good for you as they say. In general, eating something you have made yourself from scratch is always the best option whether you are vegan or not.

Meal Prep

Meal prepping is a total game changer not just for people looking to try out the vegan diet but for people in general. It saves a lot of time, allows you to stick to your budget and you get to eat things you love on a regular basis since you will be making them in bulk.

If you are not used to making vegan foods on a regular basis I would definitely recommend meal prepping because it takes a while to make something new and perfect the flavours and things. It’s particularly difficult if it’s something very different from what you are normally used to eating. Therefore, it may not be possible for you to cook something new for every meal as you may be busy with other things like work, school etc. It’s just easier if you have something that is ready to eat that you just have to heat up. Even if you don’t want to fully cook it try keeping the ingredients ready like for example you could chop the vegetables in advance.

Treat Yourself

My last tip is this- treat yourself. Don’t forget to enjoy veganuary because there are so many fun vegan things out there that you can try and enjoy. Remember not to just survive on salad- unless you like salad- and try eating something like pizza or fries once in a while. Obviously, do not just eat junk food all month but it’s okay to eat stuff that is not super healthy every once in a while because life is all about those small pleasures.

In my History of Food course I learnt that food is about so much more than just eating. It is about who you are, who you want to become and most importantly it’s about the emotions and memories that are attached to the foods we eat. Make sure to make some good memories this veganuary.

Final Thoughts

I think it is a really great idea to try new things because that’s the best way to grow as a person and veganism has helped me a lot with both my physical and mental health so I would definitely recommend trying to eat vegan for a month or even a few days.

The Hogtown Vegan- Experience And Review

So this was the last place we went to and it was definitely our favourite. As you can probably tell by the name it’s vegan and offers a bunch of amazing foods most of which are vegan alternatives for meat based foods. The place itself is really cozy and has a really cool vibe.

We ordered the buffalo wings and the Philly cheesesteak with a side of fries and as you can probably see below their portions were huge. We had to take most of the Philly cheesesteak with us because we couldn’t finish but it was so worth it. The fries were the best fries we had in Toronto and their cheese was so good. It didn’t taste like real cheese that much but it just had such a nice flavour to it that it didn’t even matter. The price was also really good for the amount we got which is always a plus!

Overall, I absolutely loved this place and would definitely recommend checking it out if you’re ever in the neighbourhood. I’m so glad we this was the last restaurant we went to in Toronto because it really lived up to the hype!

Udupi Palace- Experience And Review

This is another restaurant that we were super excited about. We hadn’t had South Indian food in forever and we were really looking forward to trying this place out. Plus the Udupi Palace had really good reviews online and the food looked good so we were excited.

When we first walked in we saw the beautiful decorations. They were so pretty and gave the restaurant a really nice Indian feel to it. The paintings were really beautiful in particular and they were so nice to look at while were eating.

We ordered the fries, the assorted palace hor-d’oeuvres, the idli manchurian and the vegetable uthapam. The fries are fried potatoes so literally there is no way you could mess that up (some people do apparently…) so we loved them. The assorted palace hor-d’oeuvres were really good and the portion was great for the price. The idli manchurian was the best out of all the dishes and I am definitely going to try to replicate that one at home! The uthapam was good but bland- it didn’t have much spices or the right amount of salt for my sister (I didn’t try it myself because I was preoccupied with the fries…). I would definitely recommend checking out this place if you like Indian food and especially if you’re a fan of South Indian food because their idli was amazing and their dosa’s have gotten really good reviews too although I haven’t tried the dosa’s out myself.

Overall, I think we had a great experience here and the majority of the dishes we had were absolutely delicious.

Cosmic Treats- Experience And Review

So Cosmic Treats was the second restaurant we went to on our first day in Toronto. We had heard a lot of good reviews of it online so we were looking forward to it and had high expectations. However, unfortunately we were a little disappointed by it.

So let’s start with the cupcakes. We ordered one vanilla and one chocolate. They both looked really good and the vanilla one had little bunny ears (it was during the Easter weekend). The taste was a little too sugary for us and it was one of those things where the first few bites taste amazing but then your mouth is just like TOO SWEET STOP. The flavour was really good though I can’t complain about that.

We also ordered some cheese sticks to balance out the too sweet cupcakes and to be honest they were only just okay. Like they weren’t bad but they just were not great. Maybe it’s just me and I personally didn’t like it. The filling was jalapeno flavoured cheese which I felt was too jalapeno-ey (I don’t know how else to describe it…). The cheese’s texture was nice though- it was hot and gooey and soft.

So that was my experience at Cosmic Treats. The cupcakes were nice and the cheese sticks were okay-ish. I would recommend going there just because the neighbourhood is so cool and hipstery you will love it especially if you like graffiti and artsy areas.

I honestly had a totally different post planned for today but I woke up and to my surprise I realised this blog had reached 6000+ followers!

I want to thank everyone who followed me and I also want to thank everyone who took the time to read, like and share any of my posts. I truly appreciate it and you have no idea how much your support means to me.

I have started posting regularly over the last few months and honestly it’s been amazing. You guys have been so sweet and supportive of all the posts. I know it takes me a while before I respond to comments but I’m busy with school too so I’m sure you can understand. I will however try to respond to all the comments as fast as I can.

Eating Vegan/Vegetarian When Traveling

As a vegan who loves to travel I know just how hard it is to find places that offer vegan options and therefore when triptipedia asked if I wanted to share my tip about how to find vegan/vegetarian food when travelling I was quick to say yes and share this tip! I also wanted to say that triptipedia doesn’t only have vegan and vegetarian tips. They actually have a number of really great tips and ideas for travelers looking to make their life a little easier. I would definitely recommend checking out their page even if you’re a pro at travelling you never know you might learn something new. And if you’re new at travelling then you have to check them out because trust me things can really go wrong sometimes and it’s always good to be prepared!
